On the contrary, this macronutrient is essential for the body and even more so for those who are active, do sport and train in the gym.

Pasta is not fattening, but it is the context in which the plate of pasta is eaten that determines whether or not it is fattening.

In fact, depending on whether you are on a low-calorie, normal-calorie or high-calorie diet, the context is different: in the first case, catabolism prevails and therefore the mechanisms of destruction and energy consumption, while in the second case anabolism and increased growth of the tissues (including the adipose organ) prevail. On the other hand, if you are on a normal-calorie diet, these two sides of the metabolism are equivalent and your weight does not change.

If you eat too much (including pasta) and therefore promote anabolism, you will gain weight regardless of the quality of the food you eat and the food choices you make. So it is possible to say that pasta makes you lose weight as long as you have a negative overall energy balance.

Pasta is energetic because it is rich in starch, providing around 4.2 kcal/g, about the same as rice although it contains less protein.

However, what makes a pasta dish much more caloric is the seasoning, especially when it has a fat source (oil, fatty cheese, butter, etc.). However, the addition of a lipid (fat) or protein component to the carbohydrate component should not be ruled out, both for palatability and to lower the glycemic index.

I therefore recommend limiting abundant and excessively lipidic condiments and preferring one with more protein, both to make the meal more appetising and to make it more complete. Example: pasta with a low-fat fish sauce and a drizzle of extra virgin olive oil added after cooking.

Conclusions

Pasta is not fattening, but it is an excellent food for obtaining a good quantity of carbohydrates, which are essential for the body. It can constitute a complete meal when a protein component and a limited fat component (such as a drizzle of oil) are added together with a portion of vegetables.

Pay close attention to the context in which you eat pasta or any other food: if you generally eat large portions at all your meals during the day, it is this excess that will make you gain weight and not the carbohydrates.

Article by Riccardo Negro

Is pasta fattening?
