‘Il mais Ottofile’ (The ‘Ottofile’ corn) is a very ancient and autochthonous variety from the Piedmontese valleys.
It is a sweet flour with an authentic taste and an intense scent. This variety of wheat, although excellent in taste, has been abandoned over the years in favour of other qualities of maize easier to grow, leaving its cultivation to only a few local farmers for a small production or personal consumption.
Today, fortunately, it has been rediscovered, thanks to its organoleptic qualities and particular taste. Its name, ‘Oottofile’, was given by the number of rows of grains present on the cob.
Originally it was also called ‘meliga del re’ (‘meliga’ of the king) since it seems that King Vittorio Emanuele II loved its taste very much. This variety is perfect to cook ‘polenta’, a traditional dish of Italian cuisine widely spread throughout the northern part of this ‘Bel Paese’. In fact, thanks to its sweeter taste and ancient flavour, it goes perfectly with many of the seasonings that can be used in this dish, such as ‘ragù’, mushroom sauces and cheeses.
The contrast between this sweet ‘polenta’ and the strong flavour of gorgonzola cheese is also excellent.
