Anchovies are probably the best known and most popular variety of oily fish in Italy. They are also known by the name of anchovies, which comes directly from the Vulgar Latin “apiuva”.

According to an ancient legend, anchovies were originally particularly petulant stars in the firmament, so much so that they even annoyed the moon and God himself, who tired of their incessant chattering one day to punish them sent them to the bottom of the sea, where they still live in silence. From their past as luminous stars, they still retain their splendid silvery colour and the habit of gathering in shoals, forming luminous constellations as they once did.

This fish was already known and used in cooking in the days of the Romans and Greeks, who used to fish for them in the Mediterranean and eat them simply cooked together with vegetables. But they were also used as a basic ingredient for garum sauce, the ancestor of today’s Colatura di alici, which was used to season various dishes, including meat.

We are told stories of its spread by well-known Latin writers such as Apicius and Pliny the Elder, who describe it as a liquamen, a special liquid, a natural flavour enhancer perfect for enhancing many dishes from fish to fruit, which was never missing from the banquets of the time.

According to tradition, anchovies are preserved in oil to preserve their flavour and precious nutrients, such as vitamin A and Omega 3, for a long time.

They are usually cleaned after fishing, removing inedible parts such as the head, tail and scales. They are then left whole or cut into fillets, ready to be immersed in extra virgin olive oil, where they are left to “mature” for a few months. The oil not only allows them to be preserved for longer, but also enhances their natural flavour, reminiscent of the Mediterranean Sea.

Other flavours, typical of the Italian tradition, such as chilli pepper can be added to the oil to give the product even more character.

The producer

Damar Corporate is a company located in Castel San Giorgio in the province of Salerno, a few kilometres from Cetara, the small town that over the years has become famous for its anchovies, which are among the most renowned in the world.

The company has created its own brand called “L’artigiano del mare” (The craftsman of the sea) and offers handmade fish products with no added preservatives. Their products are excellent to taste and are obviously processed according to the most ancient traditions of the Amalfi Coast.

Production area

Castel San Giorgio is a town of about 13,000 inhabitants in the province of Salerno.

It rises between the middle Sarno valley and the Agro lands, in the first inland of Salerno.

Inside the municipal territory there is Mount Castello, where the remains of an ancient castle dating back to the Norman era, built around the 12th century, are still preserved. It is a military architecture surrounded in ancient times by three thick walls and several watchtowers.

The origins of this town are ancient and date back to at least the 8th and 9th centuries AD. We find mention of this area for the first time in Roman times, since these lands were the scene of the famous Punic wars fought against the Carthaginian general Hannibal.

After the glorious times of the Empire, thanks to the courageous attempts of the inhabitants of the area to stop the Carthaginians, which earned them the respect of Rome, the territory was known in both the Middle Ages and the Renaissance by the name of San Giorgio. The prefix Castel only reappeared in 1800 following the unification of Italy, by royal prefectorial decree in 1863.
